Stuffed Green Peppers

This is a great Fall time recipe. They look festive and taste yummy.
Preheat oven to 350 degrees.

Spanish Rice
Cook rice according to directions on bag/box.
Brown hamburger.
Add taco seasoning to hamburger with roughly  3/4 a cup  of water.
 ( Use best judgment for water. It could be more or less, or follow taco package directions)
Saute onions and mushrooms.
Add onion/mushrooms to browned hamburger along with sliced olives.
Add rice to meat mixture.
Add 1 to 2 cans of stewed tomatoes and tomato sauce.
Stir everything over low heat blending all ingredients well.


Peppers
Cut off the tops and clean out the seeds.
When water is at a boil, parboil the peppers. About 5 minutes.
Place peppers on a cookie sheet and stuff with Spanish rice.
In a preheated 350 degrees oven bake for 15 minutes.
Add shredded cheese and place back into oven until cheese is melted.

Have sour cream on hand to top before serving.

*Don't have tomato sauce use spaghetti sauce or tomato paste/thinned with water.
